We moved to the Creston Valley in 2014, searching for a bit of land to call our own and try our hand at becoming more independent and eating food that we produced. Like many, we discovered that you had to have a love for hard work and minimal financial pay. We have earned rather a great sense of satisfaction in looking at a spread on the table where almost everything except a few ingredients came from either our yard or the farmers in the valley in which we live.

Way back when we moved in and were still exploring the local produce, in one foray to a local farm stand, we discovered this big, beautiful white garlic “Italian porcelian”. Just had to have that and try to grow it, and from those three gorgeous bulbs we have spent years increasing our crop and continuing to focus on a garlic that is gorgeous to look at, use in the kitchen and enjoy at the table.

Garlic does respond over time to the soil and climate it grows in, and ours is no exception to that rule. Generally large, white and beautiful to look at, it also has a tendency to be hot and spicy on the palate. Easy to peel, with good storage abilities we have focused on this cultivar though are slowly trialling other varieties. Creme de la Rasa from a garlic grower in the Okanagan and Formidable, a semi- softneck which allows for traditional garlic braid construction (Italian Porcelain is a hard neck and the necks can’t be bent to braid, so can be only be “braided” by tying them with twine.)
